First Watch Wins Liquor License for Vinnin Square Restaurant

The Select Board unanimously approved a liquor license for the First Watch restaurant under construction at Vinnin Square.

First Watch is a cafe chain specializing in health-conscious breakfast, brunch and lunch, with menu options including omelets, pancakes, salads and bowls. The chain operates more than 660 restaurants across 33 states.

The Vinnin Square location will have about 30 tables, according to Michael Lankowski, regional vice president of First Watch Restaurants. It will also feature a patio.

Lankowski told the Select Board he expects the restaurant to open January 25, but “that can change.”

Vinnin Square continues to undergo significant redevelopment. Fast and Beauty has closed and been replaced by Fit Ritual, a fitness center. The former Bertucci’s space is now home to Sam Walker’s American Tavern.

Flip the Bird closed, and Just Salad is building in its place.

In addition to filling vacant storefronts, Centercorp is adding three outparcel buildings. First Watch and Cava have been confirmed as new additions to the mall area.

The next phase of the project includes a 160-unit apartment building behind the Stop & Shop grocery store.

The redevelopment project is not expected to be completed until late 2027.
